Chimichurri sauce
Pulse in the blender:
1 bunch leaf parsley
4 to 8 cloves garlic
Stir in some of the following:
3/4 cup extra virgin olive oil
1 or 2 tablespoon diced onion
1/16 to 1/4 cup red wine vinegar (optional)
Juice of 1 lemon or lime wedge (optional)
A little zest (optional)
1 teaspoon dried oregano (optional)
1 teaspoon black pepper
1/2 teaspoon salt
A splash of soy sauce (optional)
A splash of liquid smoke (optional)
