Pulse or blend in a food processor:
1 cup mixed mustard seeds
½ to 1 cup of water or concentrated chicken stock (do not use chicken stock, if aged)
And ‘¼ to ½ dozen’ of the following:
¼ to ½ cup of brown sugar honey or maple syrup
¼ to ½ cup of orange juice (do not used if aged)
1 to 2 tablespoons worcestershire sauce
2 tablespoons butter
1 or 2 tablespoon rum or sherry
1 tablespoon of sesame oil
1 tablespoon zest
1 tablespoon of minced ginger
1 tablespoon or minced garlic
1 or 4 teaspoon of black pepper or szechuan pepper
1 to 2 teaspoon allspice
1 to 2 teaspoon nutmeg
1 to 2 teaspoon of celery seeds
½ dozen splashes of liquid smoke
Use fresh or age in the fridge
