the best way to make yoghurt at home is to use UHT milk - which costs about $1 per litre. watso often buys rtc milk at far lower prices. reading on the net (or youtube videos) seem to make it a bit complicated to use ordinary milk for yoghurt...eg
Instructions:
ok - for no particular reason, and just a gut feeling , but it seems to work
- Create a double boiler using the two stock pots and bring the milk to 185°F, stirring to avoid a skin forming.
- Cool the milk to 110°F using a cold water bath..

half a litre of cheap rtc milk , mixed with half a litre of water (watso used rainwater) - in kettle and heat for 1.5 minutes then shake kettle around a bit ...not exactly sure why - but maybe it mixes the milk a bit better - and using half water - well not exactly sure why - but maybe there is less chance of the skin on the top)... and then start heating again.
(watso uses the other half litre milk for his cereal)
before the milk/water boils. and just by gut feeling - turn the kettle off - let it cool for an hour, then add milk powder (to compensate for the water) and add starting culture (eg previous yoghurt) .
watso has made a few batches, and is happy with the results. watso often picks up milk at 50c/litre, sometimes 30c/litre and even 20c/litre.
