    Laksa

    In a large saucepan, fry in a little oil until brown:
    2 to 3 sliced skinless chicken thighs
    1 diced onion

    add the following and bring to the boil only:
    750 to 1,250 ml water or stock
    250 to 500 gm of thin cooked noodles
    250 ml of coconut milk or 50 ml of coconut cream
    200 gm of small uncooked peeled scrimps
    laksa paste or curry paste as directed on the bottle

    And ‘some’ of the following, if desired:
    1 cup mung bean sprouts
    1 cup of diced tofu

    1/3 of cup mint leaves
    a couple of splashes of light soy sauce
    a splash of rice wine
    a splash of liquid smoke
