    Marinated tuna or salmon:

    Cut two servings of the fish into sashimi.

    Dress with the following:
    4 tablespoons soy.
    2 tablespoon rice wine vinegar.
    1 tablespoon spoon press ginger.
    1 dessert spoon sesame oil.

    And some of the following if desired:
    1 or 2 tablespoons water or reasonably concentrated chicken stock.
    1 or 2 dessert spoons Worcestershire.
    1 or 2 dessert spoons xo sauce.
    ½ teaspoon miso.

    Serve with the fish with following:
    The dressing.
    Sliced spring onions.
    A few pinches cayenne or Japanese chili pepper.
