    Hey Justis, I love my job it is my passion even on the most demanding days.

    I will try any wine anytime. I have an insatiable appetite to learn and develop my knowledge, skill set and palate. I do however have some favourites....

    I drink more white than red but this is largely due to our climate. However I am more discerning with reds in that I will drink most whites if they are cold and fresh and free from faults whereas I will pass on a red if it doesn't satisfy.

    I drink Riesling more than any other variety. I love the dry, crisp purity of Aussie Riesling. It suffers from a hangover of the past when it was made in a sweet, clumsy style but these days it is very different in Aust. Unfortunately Chardonnay is suffering from a similar disease where people invoke the styles of the 90s as being the reason why they don't like it whereas today the wines are much more elegant and refined. I meet a lot of people who say they don't like such and such and so I serve it to them to great appreciation at which point I delight it revealing the variety to them. It's like fashion people follow the crowd but really most people can't tell you why they like or hate a wine variety it has simple permeated their existence.

    Love sparkling wine and champagne.

    Cabernet Sauvignon (often abbreviated to just Cabernet but it is the same thing) is one of my favourite reds. As is Nebbiolo, I'm going to Barolo this year to drink a lot of it. Pinot Noir I like but I am not obsessed like most winemakers.

    I could go on but it short there are few varieties that I don't like but I won't list them as my reasons are personal taste and not professional in nature.

    Oh yeah and I love fortifieds. From Fino to Tawny. It's almost criminal how cheap these wines are given the age and the work that has gone into them. Supply and demand
