I have a 2000 600 Monster since I bent the Kwakka and I find it thirsty..
I agree the accelleration is good, but have been absolutely left for dead by sports-bikes (most memorable a Suzuki 1300 - he just disappeared).
I only get about 250 km max out of my 17 litre tank when touring (open road), and I have it proffessionally tuned.
Other bikers report a much better range out of bigger-bore sports bikes with comparable tanks.
I think mine was the last model before they went to fuel-injection.
