Brown rice with vegetables and Taco baked chicken breasts.
Cook brown rice with stock and water.
Half way through add chopped vegetables ( green and red peppers, carrots, corn)
Cook till tender.
Drain and add spices..mix.
Chicken breast...(my god they are so big) slice into strips (no skin)
Pop into casserole dish.
In a cup add 1 pack of taco seasoning...some water and tomato sauce...all I had...mix.
Pour over chicken and bake and baste for 45 min at 200.
Very tender chicken.
Remember Son is now into eating cleaner as he is working out...his guns are now 41 cm...mine flap in the wind...just joking...well maybe.
He loved it and I have heaps for tomorrow and to freeze for his lunches.
I am such a boring cook compared to all of you but I love reading your recipes.
