    Is your fryingpan stainless steel with too little ferrous metal to harness the inductive energy (like those stainless steel fridges where your magnets refuse to stick to)?

    You can buy cast iron plates to place over the induction element, so you can place the fryingpan on the heated plate for normalised cooking. Or just buy a fryingpan that's suited to your application.

    But, knowing your how you know your technical stuff, I would say you've already considered what I have just written.
