You speak of French and Italian diets - and even they have their differences. In Italy - the north cooks different to the south. In the north they like to use butter whilst the south likes to use olive oil. Parmesan cheese is predominantly used in the north whilst the south uses pecorino (made from sheep's milk). The north prefers rice whilst the south loves its pasta and every region has its own pasta types. Many will not know that there is no such thing as a spaghetti bolognese in Italy - the spaghetti comes from Campania and the bolognese sauce - or ragu' - comes from Bologna of course. One would therefore have a tomato sauce with spaghetti or fettucini with ragu.
...and the list goes on pinto - it's pretty hard to classify "Italian food" and I'm sure French food is much the same.
The people of Ikaria in Greece - live very long lives by just eating what grows around them - and its amazing what some imagination and love can do to any dish - and the Greeks are the masters of creating very healthy and delicious dishes from very few ingredients.
