    Pulled pork tacos:

    In a pan roast or in a saucepan simmer the following for at least one hour:

    1 to 2 kg of pork belly cup into slices.

    And some of the following:
    400 gm can tomato pieces.
    2 cups ginger beer.
    1 diced onion.

    2 or 3 canned chipotle peppers in adobo sauce, finely chopped.
    1 tablespoons chili powder

    ¼ cup light soy sauce.

    A joint of sugar can cut into spears or two tablespoons palm sugar to remove the strong pork taste.
    A tablespoon dried herb.
    4 bay leave.
    1 desert spoon canned adobo sauce.
    1 desert Mexican or taco seasoning.
    A few splashes rum.
    half dozen splashes liquid smoke.

    Add water as required.

    Pull apart.


    In a separate medium saucepan simmer the following for at least ¼ hour:
    750 gm canned black beans, do not drain.

    And some of the following:
    2 cup stocks.
    1 cup chopped onions.
    ¼ cup chopped cilantro.
    A tablespoon Mexican or taco seasoning.
    A tablespoon dried herb.
    ½ dozen cloves garlic, minced.
    1 teaspoon cumin.
    half dozen splashes soy sauce.
    half dozen splashes liquid smoke.
    Mexican seasoning to taste.

    In taco shells serve the following:
    Salad greens.
    The pulled pork.
    The beans.
    Taco sauce.
