Margaret - back in the days when I/we were still a family there was always a favourite fish'n chips shop about - some run by Greeks/Italians and they were usually very good - but that has changed IMO - where I live there isn't a decent fish'n chip shop about - yes there are - two - but I can't eat what they 'cook' 'fry' whatever - whether it's the oil? or a tiny fish in a lot of batter - I give them a wide berth; yet they always have customers.
Yes, the double-frying makes them crisp, but also a lot unhealthier, don't you think?
