the missus cooks short grain rice in a rice cooker. we use it next day if we are having fried rice. i think long grain is traditionally used for fried rice, but im not certain of that. jasmine rice is easier to use as it seperates better.
yes, we use a bit more oil than healthy..lol. but its the best way. probably the reason takeaway fried rice is so good too.....but if its 'good' oil its not so bad eh? too much oil is no good either.
very hot pan or wok is the secret. a gas bbq with the plate removed can be used with a wok if you have both and no gas stove inside.
