Claiming a verse says or means something when the over all of the Bible clearly says otherwise, is pretty much the same as tampering.
Your understanding or past claims are, the following verse says Jesus was the creator or had a literal hands on role in creation, when numerous verses say, the Almighty God and Father created ALL things and in some verses, it says He did it alone.

So even Jesus does NOT include himself here in the creation of man and NEITHER does he say or imply, He is part of this GOD here.
This nonsense in Gen --> Elohim meaning plural and therefore Elohim also includes Jesus, is nothing but mans creation, rubbish.
UNLESS, you are prepared to be consistent and say, there are three Moses's or three that make up Moses as He was also an Elohim.
Key basics of the Almighty God and Father are Spirit/Word/Light = so there is your plural aspect, no more and no less.
So the plural is simply in reference to their attributes etc.
So clearly and of which the Bible forces us to accept, when the Bible says things were created through Jesus and back then he was before all things, it is simply saying that, in the mind and plans of God, His inner creation, Jesus in the future context was the Beginning of God's inner creation Rev 3:14 and the firstborn of all creation in the mind and plans of God, Col 1:15.
And through, on account of, by reason of, for the sake of, because of this future one TO BE, the Almighty God and Father ALONE, created all things and when the times were fulfilled, all things were literally placed into Jesus's hands UNTIL death no more.
1 Cor 5:27-28 - For he hath put all things under his feet. But when he saith, all things are put under him, it is manifest that he is excepted, which did put all things under him.
And when all things shall be subdued unto him, then shall the Son also himself be subject unto him that put all things under him, that God may be all in all.
All in ALL = Via his Spirit which is The Holy and His Word which is The Word.
We know full well the Holy Spirit is Not Jesus and neither The Word is Jesus as he was GIVEN these without measure.
