You are right. It's almost impossible for a deeply orthodox believer of any religion to admit that they know nothing at all about the nature of God, regardless of whether God exists or not.
God becomes like the imaginary friend that children sometimes conjure up and they build a back story with demons, wars in heaven, God becoming flesh, God supporting one single religious expression and every manner of story telling and imaginative world building possible. None of it, not one single jot is real, it's all symbolism for some other reality that may or may not exist. If God exists then the only possible connection a human might have is via the likes of Jesus and Muhammad, the Buddha and others like that and their truth becomes human truth not Godley truth.
We don't know the answers to the big questions but at least science forces religion to operate within the bounds of physical reality. They must accomodate scientific truth into their belief because there is only one truth and if teligion is real it can't be in opposition to proven science.
