G.d may be All-seeing, All-knowing, Omnipotent, but as you know, the unknowable is beyond mere words. The point is that humans have been evolving from a single-celled organism to the monstrosity it is today. That's a journey of billions of baby-steps for both body and soul.
Leviticus our friend mentioned is thousands of years old and reflects a very different age and a very different capacity. Religions never exceed the capacity of the audience in the age they were revealed. The scriptures of the major religions do look somewhat, time out of place today and that's why they can't be judged by the standards of this age.
