You can buy 1 share, you just have to find a broker who will let you (as in, over the phone / in person / through a mate).
Or have a mate sell 1 share at a particular price, and you 'buy $500' worth at that price (and only receive 1 share, then cancel the rest of the order).
Or have $500 of shares, and sell all of them except one.
Etc, etc, etc.
