They don’t coat anode in copper. When cell manufacturers make the cell they slurry the anode mix on a copper foil and then dry it. Technically the copper sheet is the negative electrode for the anode.
For the cathode they then use an aluminium sheet as the positive electrode, divide it with a separator material Then they roll it up like a jam roll, mmmm donuts...
