I'm just really surprised that with all your experience and knowledge of Christianity and the biblical narrative that you can't see aspects where the sin of Adam and Eve is relatively insignificant.

And I'm surprised that you can't see that Adam and Eve's sin is highly significant.
The Biblical narrative has it the God's creation was perfect until it was stuffed up by the sin of Adam and Eve.

Without this sin, there would have been no need for the redeemer, Christ, and Christianity would probably not exist at least in its present form as demonstrated by the verses from Adam And Eve Sin

For if, because of one man's trespass, death reigned through that one man, much more will those who receive the abundance of grace and the free gift of righteousness reign in life through the one man Jesus Christ

For as by a man came death, by a man has come also the resurrection of the dead. For as in Adam all die, so also in Christ shall all be made alive.
