Some year ago, now - I was taken to one of those 'Heurigen' in Vienna, where they serve the young wine as well as basic but freshly cooked and fried dishes of the more hearty kind. Also salads - on this visit I came across a vegetable salad which was made from a white, root-like vegetable called 'Schwarzwurzel' (blackroot, because the skin is black but the interior is white and it has a carrot shape) - which was served within a light vinaigrette and some good-quality mayonnaise poured over - it was totally delicious.
I have been trying to get this in Australia to no avail and found out the Italian name for it, it is 'Scorconera'
Have any of you veggie growers ever come across this wonderful vegetable?, which is also called the 'vegetable oyster' because of its beautiful taste?
In order to emulate its taste, I have managed to devise a salad which is a mix of lightly-steamed green bean- asparagus and parsnip (parsnip for the whiteness and its abillity to absorb flavours) - plus finely-sliced onion and dill all initially done in vinaigrette and then a home-made mayonnaise poured over - and people really like it - I had to make it on Sunday for daughter's housewarming party.
