That video you posted seems to be before the release? On Facebook they said it was "coming soon" on March 4. The video you've posted is from Feb 26th. Is it possible they're still working on this at the moment and it hasn't even been properly released?

Perhaps it's a small team working on it so they might not have spent much capital on it. I'm not sure what the standard for Roblox games are in terms of quality though it does look like it could be better

At least the Lemon Sky Studios' art outsourcing is reliable and that's a constant - they maintain a high standard here with the approx $16 million in revenue last year.

As mentioned above, the Metal Genesis looks to be a higher quality release going by what we've seen.
