BEEF- In my experience (past life) most commercial beef cattle are derived from 2 basic historical breeds (which elude me for he time being...Pole* etc) and hence are also judged according to the dom/recessive features. Most common on the market Australian market are AIS (Australian Illawara Shorthorn), Charolais, Gertrudis, Brahman, Droughtmaster, Angus, Hereford. The dairys go for dog meat (Gernsey, Jersey, Fresian heffers etc) including bad bulls (pizzle is too small, sperm count is too low etc)...basically, its a brutal industry you are supporting when you buy mass slaughtered drought ridden 100% Aussie Beef (with an added 7% foreign seasoning/nitrates/nitrites etc which apparently dont go into making up a total 100% figure).
