Pulse in the food processor the following spice paste:
2 medium onions.
3 cloves garlic.
15 mm ginger.
2 dried red chillies.
1 stalk lemon grass.
1 dessert spoon ground coriander.
1 dessert spoon ground cumin.
½ teaspoon turmeric.
¼ teaspoon ground cardamom.
In a fry pan sauce fry for 10 minutes.
Then add the following and simmer to your liking:
1½ cups coconut milk.
1 tablespoon tamarind paste.
1 tablespoon brown sugar.
2 kaffir lime leaves, whole.
¼ cup peanut or cashew butter.
Add some of the following:
½ cup rendered beef fat.
A couple of splashes rice wine
A couple of splashes fish sauce.
A couple of splashes soy sauce.
A couple of splashes liquid smoke.
A couple of splashes Worcestershire.
A couple of splashes xo sauce.
