2 kg pork belly rubbed with 1 to 2 tablespoon jerk seasoning:
Roast in some of the following:
100 ml of chicken stock.
100 ml of pineapple juice.
100 ml dry cider.
1 medium diced onion.
1 dozen anchovies.
3 tablespoons soy sauce.
3 tablespoons worestershire.
4 cloves of smashed garlic.
2 sprigs of thyme.
4 bay leaves.
1 piece of orange peal.
A couple of splashes of rum.
½ teaspoon of nutmeg.
A couple of splashed of liquid smoke.
Roast or barbecue for at least ½ hour until brown.
