Because religion is tribal. It teaches exclusivity, rather than the fact that all religions are just aspects of a single religious outpouring. The Pharisees and religious leaders in the time of Jesus expected more from Jesus. He did not fulfil the great prophecies required to be the Jewish Messiah. He was an obscure Teacher, had very few followers and made little or no impact during His life.

“For unto us a child is born, unto us a son is given: and the government shall be upon his shoulder: and his name shall be called Wonderful, Counsellor, The mighty God, The everlasting Father, The Prince of Peace” (Isaiah 9:6)

Clearly that does not apply to Jesus, that is why the Jews only believe in the first 5 books. Because they did not understand that the prophecies applied to both the first Jesus and another teacher who will be like Jesus returned. It is then when these prophecies begin to be fulfilled and the Jews will convert as a nation and eventually they will also recognise the first Jesus.
