No fat, offal, wood chips, bread crumbs, floor scrapings and whatever else butchers put in.
(where do people get these ideas from, beats me as sausage making/production is highly regulated)
Truth be known, I reckon he threw away any fat trimmings.
FYI, Fat must be added to venison meat, be it minced or into sausages including pepperoni or salami
as venison has very little fat within the meat,
bread crumbs
the better the sausage, there will be bread crumbs, this is a good thing
and even milk powder
and rice flour
trimmings, this is what most make sausages out of, so there is no waste in/from the animal killed
(I think reducing any waste from a creature killed...is a good thing, kind of like respect)
offal, heart is like eating the best steak you can buy, when correctly prepped and cooked, you should try it sometime
