Barbecue chicken with mole sauce:
Marinate the following:
1.5 chicken cut into pieces.
1.5 cups orange juice.
1.5 cups chicken stock.
Barbecue on the charcoal webber.
Make the sauce by frying the following:
1 dessert spoon olive oil.
1 medium chopped onion.
2 tablespoons sliced almonds.
4 cloves pressed garlic.
2 teaspoons cumin seeds.
2 teaspoons coriander seeds.
½ teaspoon whole anise seeds.
2 whole cloves.
Chipotle chili to taste.
½ cinnamon stick.
1 bay leaves.
¼ cup raisins.
½ teaspoon dried marjoram.
½ teaspoon dried thyme.
1 teaspoon dried oregano.
1 tablespoon tomato paste.
Finish off with:
The marinade:
30 gm dark chocolate.
Rice wine.
Soy sauce.
Worcestershire.
