I'm not sure where you got information that haemaglobin/iron crystalises within the body, but please take note that blood only crystalises once outside of the body and dried after 12+hrs....little experiment for you.
If you suffer from gout, the ureaic acid in the affected joint crystalises, causing intense pain and immobility. Thats the only thing from my medical knowledge by memory that causes internal crystalisation.
