Fish Escovitch
Season four serving of fish fillet with the following:
2 teaspoons paprika.
1 teaspoon ground cumin.
Salt.
Pepper.
In a pan fry in a few mm of oil.
Serve.
For the sauce lightly sear the following:
2 to 4 smoked chiles.
3 capsicums cut into strips.
1 large sliced white onion.
1 julienne carrot.
¼ dozen cloves garlic crushed.
½ dozen allspice berries.
¼ teaspoon celery seeds.
¼ cup rice vinegar.
¼ cup sherry.
2 tablespoons soy.
2 tablespoons Worcestershire.
1 tablespoon fish sauce.
1 dozen anchovies.
Serve the condiments without the vinegar.
