Spanish bean and chorizo:
in a large saucepan fry the following:
A few knobs of butter.
3 sliced chorizos.
1 stalk sliced celery.
1 medium diced onion.
1 small diced carrot.
When butter starts to burn add the following and simmer until the stock forms:
5 cups water.
2 packets chicken necks.
2 cans drained white beans.
¼ cup tomato paste.
¼ cup paisley.
½ dozen cloves press garlic.
¼ dozen bay leave.
½ to 1 teaspoon smoked paprika.
And some of the following:
½ cup rendered beef fat.
¼ cup soy sauce.
¼ cup sherry.
The peel of ½ orange.
½ dozen anchovies.
