@LoadedDog my Mum's concoction had vinegar in it and a bit of wine, too, but mostly herbs, a bit of onion, smidgeon of garlic, always grated rind of lemon into it as well - from memory - have to dig out the recipe - she later used some of it for sauce, but the meat was roasted after the soaking. Have more urgent business to attend to, but shall pencil it into my calendar () -
