Easter roast:
Barbecue roast beef chicken pork or lamb.
For the crumble topping grille the following:
100 gm pork crushed scratchings.
100 gm sourdough bread broken into pieces and baked until crisp.
100 gm chopped pistachiosy chopped.
50 gm chopped dried cranberries.
2 tablespoons chopped thyme.
1 orange zest.
1 dozen chopped anchovies.
When serving apply a layer of brown sauce or mustard and topping.
Serve with stuffing and gravy.
