Hi JW, Yes I do prefer chorizo or Italian sausage fried but for only about a minute each side, to long will cause it to dry out.No need for any oil as they are full of natural fat. While cooking them throw in some Kallamatta olive with some garlic and chilli and herb flakes, don't cook them just warm them through, they go well together on the plate IMO.
