I use to marinade a steak for a day before cooking.I now realise I was destroying the steak over riding it with rubbish.I now marinade a good steak in olive oil and cracked pepper for about half an hour. Throw it onto a med/high BBQ hot plate for about 3 minutes each side job done! No need for any salt IMO.Marinating meat or fish with salt will cause it to start cooking and dry out prior to cooking.If you are a salt addict add it after cooking IMO.
