    I had trouble cooking steak for years till I went to this method, and receive rave reviews every time I cook it now. :)

    Heat the pan and a plate till hot, put the steak on the pan and don't move it until the bottom two thirds is cooked to your liking (look at the outside edge). Then turn over and cook the other side. When cooked, take it out of the pan, pop it on the now warm plate and leave it for about two minutes. The fibers relax when placed on the warm plate and draw any juices deep into the steak, making it tender and juicy.

    Just try it. And I do season my steaks with herbs and spices, but never salt it,as salt will draw all the juices out of the meat and leave it tough.
