Hi Dino.
We usually put an oven tray over pan to help it come to boil and also to stop splashing.
Once it has been strained put tray back on to bring to boil and take off to thicken up.
I have to confess its my wife who does most of the cookin, I usually get to drive the moulie and tell everyone that I make it.
She also makes a mean collie pickles.
