Hi Kincella
I was diagnosed two months ago with Type 2 (NIDD crrently under control). BSL was up in the mid 20's and now is holding in the 7's. I have changed my diet, and am happy to send you any information I have used to achieve low BSL.
My family loves johnny cakes, brownies, lemon meringue, sweet and sour dishes, etc., so one new product in the pantry is xylotil, an alternate to sugar. Last night for instance we had wings in a vietnames caramel sauce (compliments of the Saturday Age). My doctor is now using xylotil for his family!! There are other 'sugars' available but this one at ..ugh ... $10-00 a kilo is the cheapest and my family and friends use it without knowledge that 'sugar isnt sugar' .. lol
We too are in regional NSW - just over the border from Victoria, so I understand how hard it is to buy products which accommodate this change in lifestyle.
Am happy to help you with any tips and info I have.
Regards .. Mandi
