those two potato salad recipes are very different in taste
I do not add onion to the sweeter, tastier recipe with the corn and pineapple
the corn and pineapple version is nice with the bacon and egg as well
we chop the bacon into tiny pieces, so too the pineapple
the cheese and carrot version are also grated into the smallest size you can
the potato is cut into small pieces of around 1/2" to 3.4" squares
the additional ingredients are not overwhelming in the taste, but simply little bursts of flavour, to enhance the potato
you can add tiny chopped capsicum pieces, both red and green for added colour and taste, or red capsicum with green peas
my daughter made a mince steak and onion mix, with taco seasoning mix and added this to a potato salad with mayo recipe.
the combinations are endless
