Changing out a pump on a 10,000' well can generally be done in 5-8 hours-- if everything goes smoothly.
About the paraffin issue-- depending on how much the well is producing, it can be a minor annoyance or a big headache. I've worked in the Howard County area, and many wells have so much paraffin you have to shut down occasionally and clean out the well bore. The pump gets mucked up, the well bore decreases in size as the crap builds up on the casing walls. Steam treating is done. How often depends on how waxy the well is.
