I'm not a geologist but it looks to me like grams-metres is a useful and convenient unit to quantify the yield from a particular core (drill hole).
I guess the assumption is that since dill holes are arranged in a regular pattern, and the results from each and any drill hole can be representative of the rock in it's near vicinity, then a set of results from an array of holes can be used to calculate an approximate yield of precious metal from that body of rock. This is part of the data that goes into the computer.
Happy to be corrected by someone who really knows!
