Well actually they dont really "measure: historic pH, they estimate it from a model and from proxies they hope is correct, and hope they havent left out something they didnt expect or know about...

Of course some models and some proxies are somewhat better than others...

Science certainly can be inconvenient and continues to evolve past what your teacher tells you and even knows about even if they claim it is set in stone and "settled"...
