With that larger margins on offer and such low start up costs you have to wonder how long those margins will exist. There is a small marketing advantage with a term such as organic or natural but unless you do the full certification at time and money cost the true believers in that market are not sucked in as easily as they once were in such products. If using flue gas CO2 from a industrial plant and I assume scrubbing it I am not sure if people will accept that as organic and natural.
It is all the little holes in a swiss cheese that make it full of air not one big one.
