Chooks lay eggs on their own poo sometimes. While growing up as a child my parents kept chooks. Regular cleaning of the pen would keep their poo levels down. But on the odd occassion it would be easy to pick up an egg with poo on it. Even if a person wore gloves and the bird was infected then the persons gloves would carry the virus and spread to the door of the chicken pen and even my shoes could pick up some poo on the soles and transfer this on. You see my point!
