The earth is not "cooking now" because the plants have over millions of years slowly aborbed all the CO2 and looked them into fossils fuels.
We burn in 100 years what took a couple hundred million years to form....
That's why its not as hot now. Sure there were variations over time, but nothing so much and so quick as the last 150 years or so.
