What is required to change things is for both the human strain and the bird flu strain to infect at the same time so crossing over in a cell infected with both viruses can occur. This can happen either in a human or a pig. In the past this has occurred in southern China, but not with this particular bird flu virus.

Influenza virus has 6 pieces of RNA. These pieces can get mixed so we cannot know what will come out of the mixing. We could get a range of new viruses.
