    I even have a french cheese for over the weekend . Comte Le Montarlier .

    Currnetly doing my new found found aging thingy. Affinage.

    No expertise at it but would seem you need air your cheese like wine before eating also !

    Which is a French artform it would seem.

    Now have to buy a bottle of wine that will outlast the cheese
