It tastes between Sun hock and Tilapia ie there really is not much taste as very mild despite the marketing blurb , it does have a nice firm texture so in that sense better than snapper more like Hoki or cat fish in texture and is a slightly off white but still looks very presentable , really needs to be pan fried and use condiments like lemon pepper to make it a decent feast .
Taxi Kitchen in Melbourne use to have it on their menu several years ago , personally for fish I prefer something with a bit more natural taste
I guess it is priced high as there is limited supply and has novelty appeal , personally I prefer salmon or tuna but to each their own
At around $20 a kg wholesale I doubt Maccas will be selling it any time soon .
I do like the can do attitude of the MD in how they made much of the fingerling tanks themselves , plus the pontoons for the fish farms also the expansion rate seems to be around 60% per year currently
