because the pigment in the blue acropora is in the skeleton where as the other corals it is from the symbiont zooxanthellae which gets expelled when the animal is stressed
And no, not nearly all staghorn coral is white, in fact i can't think of any naturally white acropora, perhaps light brown but not white
