Japanese style marinate salmon:
Cut 500 gm salmon and / or tuna into thumb sized pieces.
Encrust with wheat or rice flour.
Lightly fry in 5 mm of oil.
Marinate in the following for at least 15 minutes:
100 ml water.
100 ml rice vinegar.
50 gm brown sugar.
And ‘some’ of the following:
50 ml sake.
25 ml soy sauce.
20 mm grated ginger.
2 cloves of grated garlic.
A few splashes sesame oil.
Serve hot warm or chilled.
