    With the big cholesterol scare of the 1970s, eggs took a downhill slide.

    As health authorities told us to eat only 300mg cholesterol a day there was little room for the poor egg at 210mg in every yolk. Although it made common sense that food cholesterol became blood cholesterol, it soon became clear that the body did not respond like that.

    Cholesterol in food can raise cholesterol in blood, but the response is variable. About 70% or humans compensate for the extra cholesterol in food by reducing liver cholesterol production, reducing the amount it absorbs from food, or by producing more bile (bile is made from cholesterol) In the other 30% there is only a minor increase in cholesterol

    Egg lovers will take great delight in hearing of the ultimate in egg research. A study published in 1999 that followed 38,000 men and 80,000 women, found that an egg a day had no impact on the risk of heart disease or stroke in healthy men and women. Unfortunatley, according to nutritionist Glenn Cardwell, that good news hasn't filtered through to the public.
